Once again I've got idea for recipe but combining two different recipes. It's easy and healthy :)
You will need
50 g barley
1 medium zucchini
20 g mozzarella
1 teaspoon of olive oil
1 chopped garlic clove
100 ml of milk
2 tablespoon of sour cream
salt, pepper, parsley
First you peel off zucchini, then grate it and add salt. leave to rest. Rinse out the barley with water and cook it in water. Put a sauce pan with an olive oil on the heat, add chopped garlic and stir until garlic is lightly brown. Then add milk and drained zucchini. Cook it for few minutes.
Drain cooked barley and add it to zucchini sauce.
Stir and cook for few more minutes, until milk is absorbed. In slightly cooled dish add sour cream and mozzarella.

Spolenta (spinach + polenta )
One more twist..when you love spinach, but you can't always eat the same ol' dish...so it is Sunday, you are working and thinking what would you prepare today for lunch..something warm, and healthy and fast...

OH YES!
Why wouldn't I combine spinach and instead of flour, add polenta. It IS healthier and it's totally different..
And after 10 minutes of preparing the dish, I finally can say: it is yummy! :)

200 ml milk
120 g chopped spinach (frozen or fresh)
2 teaspoons polenta
1/2 teaspoon olive oil
1 clove of garlic
salt, pepper
Put a sauce pan with an olive oil on the heat, add chopped garlic and stir until garlic is lightly brown.Then add milk.
Immediately add spinach and stir for about 10 minutes. Add polenta, salt and pepper. Stir. Serve! With yogurt. Eaaaat :)
And I served it with tomato salad. Simple. Tomato, balsamico, salt and chopped garlic.
