Sabor cookies

Adopted from friend :)

Quick and crispy :)



You will need:
1 wafer ( app 28×37cm)
140 g sugar
4 egg yolks
140 g ground walnuts
140 g raisins
4 egg whites
15 grams of sugar

some ground walnuts for sprinkling

Like always, I made some twists and addition. i added chocolate and rum, so if you want to do my way, you will need
rum
and powdered chocolate.



With hand mixer mix yolks and sugar until smooth. Add walnuts, powdered chocolate, raisins soaked in rum and spread cream on wafer. Put wafer into a pan and place it in preheated oven. BE CAREFUL, you need to bake it only for few minutes, about 10 or some..Check occasionally, you will see when it's baked :)
While first part of cookie is in oven, mix egg whites with sugar. When sugar is dissolved, and the first part of cookie baked, spread egg whites mixture on baked wafer, sprinkle with walnuts and place it in the oven. Before that, switch off the oven, so that egg whites are slowly baked while oven is cooling down. When the egg whites are crispy and yellowish, your cookie is finished.



Cut it in whatever form you want, and don't hesitate to make more than one wafer, because you can get easily addicted to this cookie :)

Grandpa's Moustaches

No, You didn't read it wrong. And yes, you are on a right page! The name of this dessert is little strange, but the dessert is fantastic: it looks great and tastes fantastic :)




Don't worry, it's not some witch potion where you need to cut off your grandpa's mustaches. The cake is named like this, because when you slice up the cake, you get pieces that looks like mustaches :) Interesting, right? :)


You don't believe it? Look for yourself!






Dough 


350 g of flour 
150 g margarine or butter 
7 tablespoons of milk 
1 tablespoons of sugar 
4 egg yolks 
4 teaspoons baking powder 
2 tablespoons of sour cream

Place the flour and baking powder onto a flat work surface and shape it into a well. Pour the milk, sour cream, egg yolks,  margarine or butter, sugar and a pinch of salt into the center of the well and work into a ball of dough. Use a rolling pin to flatten the dough into a square block. You will get 3 blocks out of this recipe. 

 


Filling 


4 egg whites
200 g ground walnuts
vanilla sugar
1 - 2 tablespoons of cocoa 
150 g sugar

With electric mixer beat egg whites, add sugar and vanilla sugar and continue mixing until egg whites are firm enough and all sugar is dissolved. Then add ground walnuts and cocoa, and carefully mix it with spoon.

Now you will need:
some jam 
some ground walnuts for sprinkling
some cocoa and a little bit of cinnamon


Spread jam over the roll out dough leaving the middle of dough empty. Sprinkle ground walnuts, cocoa and cinnamon over the spread jam ,



and now roll the dough on both side (left and right) equally, so that you leave a little empty space in a middle. 



Put the dough into a pan. Fill the empty space with filling and put it in a preheated oven.



Bake until lightly golden. Take out of the oven.


plus
50 g  milk chocolate 
A little icing sugar




When the cake cools, sprinkle sides with icing sugar (white whiskers ;) ) and in the middle spread the melted milk chocolate. 



Čičini brkovi


Za tijesto:
350 g brašna
150 g margarina ili maslaca
4 žumanjka
1 prašak za pecivo
7 žlica mlijeka
1 žlica šećera
2 žlice vrhnja

Za posip:
Mljevenih oraha
Cimeta
kakaoa
Zamijesite tijesto i razdijelite u tri dijela. Tanko razvaljajte i namažite pekmezom lijevu i desnu stranu, ostavljajući sredinu praznu. Pospite pekmez obilato s orasima, cimetom i kakaom. Zamotajte lijevu i desnu stranu, ostavljajući malo mjesta u sredini. U njega ćete staviti fil.


Fil:
4 bjelanjka
200 g šećera
200 g oraha
1 žl kakaoa

Izmiksati bjelanjke s šećerom dok ne dobijete čvrsti snijeg, Umiješajte orahe i kakao. S tim filom popuniti sredinu kolača.

Staviti peći na 200 stupnjave i peći dok ne dobije lagano smećkast. Izvaditi. Posuti kolač a strane šećerom u prahu, a sredinu premazati s rastopljenih 50 g mliječne čokolade.

Pri rezanju dobijete kekse koji nalikuju čičinim brkovima =)
 


Hungarian Cake

Still, we don't know who is She. That famous Hungarian woman who inspired this traditional, low budget, and unbelievably tasty cake. But who cares, as long we know the recipe. You wouldn't believe how little ingredients you need for this cake, and when you taste it, you will not believe how delicious this cake is.



Dough:
600 g flour
1 teaspoon baking powder
2 eggs
200 g sugar
8 tablespoons sour cream
140 g margarine or butter

Pour flour mixed with baking powder on the table and chop with margarine. Add sugar, eggs, sour cream and knead the dough. Then divide the dough in 6 equal parts.  roll the dough into a rectangle that is the size of a baking pan ( 32x33 cm). Bake on the reverse side of the pan. 



Chocolate-rum cream:

2 L of milk

20 tablespoons flour

400 g sugar 
 
100 g dark chocolate 
100 g milk chocolate
3 tablespoons cocoa
3 tablespoons  of rum
1 vanilla sugar

For cream, you need two bowls. Place 1500 ml milk in saucepan over low heat and in the remaining 500 ml milk mix flour and sugar . When the milk starts to boil, add the mixture and stir well until it's cooked. Remove cream from heat and add chocolate, vanilla sugar and rum. 

baked layers

When the first layer of cake is baked, start making the cream. It is important that hot cream goes on hot layers, so that cake is moist and soft right away. So you put first layer, cream it, second layer - cream..and you repeat till the end. Last layer shouldn't be creamed, because on top we will put chocolate glaze.



Chocolate glaze:
150 g dark chocolate
100 g milk chocolate
1 tablespoon sugar
about 3-4 tablespoons milk (add more if you think that glaze is not smooth enough, just don't make it too liquid)




Melt it in saucepan and pour on top of the cake. Working quickly, use a knife or long spatula to smooth the glaze across the cake letting it fall over the sides. When the glazing is completed, let the cake cool on the counter or in the refrigerator until the glaze has solidified.

No, they don't have a degree in art, but they are great for your art ambition or, for your kids, or for waking up your creative side.
Why?
Because dough for this cookies is great for modelling so you can form this cookies in any shape you want!
And yes, they are delicious too :)

Batter:
100 g margarine, softened
 100 g brown sugar 
 2 vanilla sugar 
1 egg
4 tablespoon powdered chocolate 

2 tablespoon cocoa 
1 teaspoon baking powder
2 tablespoons sour cream 
2 teaspoon cinnamon
1 tablespoon rum 
300 g flour

Teddy bears

Mix softened margarine with sugar and vanilla, than add  egg and sour cream and whisk. Add flour, baking powder and knead the dough. Divide it in two parts. In one add chocolate cocoa, rum and cinnamon. Knead well.
Use your imagination. You can make balls for heads, eyes in different colour, arms, tail, broom...whatever you want. When you formed your cookies, carefully put it on baking sheet and put it in preheated oven.

Bake it and leave it to cool down. Don't take them out too early, because they can crumble.

Indian Cupcakes

Meringue?

Yes, please.





Old cake with a twist. Not in a form of cake, but in a form of a Cupcake.
What I've got? Some hybrid between Dickmann's, muncmallow and my original cake.
No one complained, au contraire...:)



Batter
6 egg yolks
6 tablespoons of sugar

3 tablespoons of chocolate powder

2 tablespoons of cocoa

3 teaspoons of baking powder

1 tablespoon of oil

200 ml milk

7 tablespoons of flour


Meringue
400 g of sugar
2 vanilla sugar

half lemon (juice)

6 egg whites




Chocolate Glaze
100 g of milk chocolate
150-200 g of dark chocolate

4 ml of milk
4 tablespoons of oil

For a batter: mix with electric mixer  egg yolks and sugar until smooth. Than add oil and milk. Mix. Add chocolate, cocoa, baking powder and flour. Mix well.  Divide the mixture between the cake cases, filling each on about ¾ full, and bake for 15-20 min.



For meringue: Fill medium saucepan one quarter full with water. Set the saucepan over medium heat, and bring water to a simmer. Combine egg whites, sugar, vanilla sugar and lemon juice in the heatproof bowl of electric mixer, and place over saucepan. Whisk constantly until sugar is dissolved and whites are warm to the touch, for about 10 minutes. Test by rubbing between your fingers.



Transfer bowl to electric mixer fitted with the whisk attachment, and whip, starting on low speed, gradually increasing to high until stiff, glossy peaks form, about 10 minutes.


Fill a pastry bag with the meringue and starting in the centre of cool cupcake, pipe a spiral of meringue into a 2-inch-high cone shape





For chocolate glaze: In a stainless steel bowl, placed over a saucepan of simmering water, melt the chocolate, oil and milk. Stir until chocolate is smooth and completely melted. Remove from heat.Transfer to a small bowl, and let cool about 15 minutes. Holding each cupcake by its bottom, dip cupcake in the chocolate to coat frosting, allowing excess to drip off. Transfer to a baking sheet fitted with a wire rack. Spoon more coating around edge of cupcake and any exposed frosting.
Put it in refrigerator for about 1 hour. Eat it. Enjoy it. :D :)



Indijaneri



Tijesto
6 žumanjaka
6 žlica šećera
3 žl čokolade u prahu
2 žlice kakaoa
1 prašak za pecivo
1 žlica ulja
2 dcl mlijeka
7 žlica brašna

Šaum
400 g šećera
2 vanilin šećera
mrvu soka od limuna
6 bjelanjaka

Glazura
100 g mliječne čokolade
150 - 200 g čokolade za kuhanje
malo (4 ml) mlijeka
4 žlice ulja



Dakle, za tijesto klasika: žumanjci i šećer, pa dodamo ostale sastojke, dok se sve fino ne sjedini. Ulijemo  tijesto u košarice (napunimo oko ¾) koje smo prethodno stavili u kalup za muffine . I stavimo peći.  Za šaum priredimo veću i manju posudu (ne plastičnu dakako, jel ide to sve na vatru :D). U jednu nalijemo vode i stavimo na štednjak. U drugu stavimo bjelanjke, šećer, vanilin šećer i malo soka od limuna, malo umutimo i stavimo u veću posudu na vatru. Miksamo mikserom oko 10 minuta, dok se šećer ne otopi. Ne smije biti predugo, ali opet ni prekratko, to onak, po procijeni :D Izvadimo manju posudu iz vode, tj. veće posude, i nastavimo miksat još 10 minuta.  Šaum  se počne odvajat od posude, divno nešto, toliko čvrst bude! 



Vrećicom za ukrašavanje (ili ja uvijek pogubim neki dio tih tubica za ukrašavanje, pa je dobra i obična vrećica za zamrzavanje s malo zarezanim rubom :D :)) šaum stavljamo na ohlađene  muffine.
Za glazuru sve stavimo i kuhamo na pari, dok se ne sjedini. Glazuru istresemo u neku užu i dužu posudicu (al da stane maffin i po dužini i širini, fkors) i  tarararara umačemo
